Wine Pairing Evenings, Poured From the Estate
Hotel Bulevar's intimate wine wall and lounge bar are the setting for a new private pairing dinner — six courses, six glasses, all of it poured from a single estate above Mostar.
The evening is built differently from a typical tasting menu. Rather than pairing dishes to a wide-ranging list, the kitchen and the estate's own cellar work backwards from six labels — a white, a rosé, and four reds spanning the estate's youngest and oldest vintages — and compose each course specifically to meet the glass in front of it. The result changes slightly with each vintage year, but the structure stays the same: light to full, early evening to late.
Seating is limited to the wine lounge's own small table, set beneath the wall of bottles that gives the room its name. A member of the estate's own team hosts each seating, walking guests through the vintage, the vineyard block it came from, and the reasoning behind its pairing — closer to a conversation than a formal service.



Every glass on the table came from the same hillside. That's rare enough to build an entire evening around.
The pairing dinner is now open for reservation, with seatings held on request through the front desk or by phone. Given the size of the room, early booking is recommended — particularly for guests hoping to join on a Friday, when the evening often follows straight on from the rooftop's live music.
